The Depot sliders - by Al Brown


1 packet of Loaf's Slider buns

350 grams of snapper


1 preserved lemon

Halve slider buns, butter them and then heat until warm through.

Portion pieces of snapper, season with salt and fresh black pepper and pan fry.

Fine chop preserved lemon and fold through mayonnaise.

To assemble the sliders spread a lick of the preserved mayo on top and bottom half of each bun. Place the cooked snapper portion on the bottom half. Top with some watercress leaves, a fresh squeeze of lemon juice, add the 'lid' and serve.
