Mexican Beef Sliders with Salad & Corn Chips - My Food Bag

Ingredients

MEXICAN BEEF PATTIES

450g beef mince

1 carrot, grated

1/2 red onion, finely diced or grated

2 tsp Mexican beef spice mix

1/2 cup fine breadcrumbs

1 tsp Worcestershire sauce

 

TOMATO SOUR CREAM

125g sour cream

1 Tbsp tomato sauce

1 tsp mild sweet chilli sauce

 

TO SERVE

2 tomatoes

1/2 red onion 

2 baby Cos lettuce

10 slider buns

1 packet corn chips

Description

PREHEAT oven to 150?C.  Line an oven tray with baking paper.  Preheat BBQ grill and hotplate to high (if using).


Method

Place all beef patty ingredients in a large bowl and use clean hands to mix well.  Use a quarter cup measure and damp hands to shape into small patties.  Set aside on a plate while you prepare the rest of the meal.

In a small bowl, mix all tomato sour cream ingredients together; thinly slice tomatoes and onion, finely shred lettuce.

Cut slider buns in half horizontally and place on prepared tray, cut side up.  Toast in oven for about 5 minutes, or until golden. Alternatively, toast on BBQ grill.

Heat a drizzle of oil in a large fry-pan, on medium to high heat (or use BBQ).  Season patties with salt and pepper and cook for 3-4 minutes each side, or until browned and cooked through. 

TO SERVE, place all ingredients in middle of table for everyone to make their own sliders.  Spread tomato sour cream on inside of each bun, top with a Mexican beef patty, some onion, a slice of tomato, lettuce, then finish with top of slider bun.  Serve corn chips on the side.
