Smoked Paprika Chicken and Chorizo Sausage Manchego Pies - as seen on Good Morni

Ingredients

2 Tbsp olive oil
4 Chicken Thighs, boneless
1/4 Cup Chorizo sausage, sliced
1 Onion, diced
2 cloves Garlic
2 sprigs oregano
2 tsp smoked paprika
500ml Chicken stock
2 tsp Corn flour
2 Short crust pastry sheets
2 puff pastry sheet
4 Thick slices of Manchego
Sea salt
Cracked pepper
1 whole egg, beaten


Description

Make 12 mini pies
Time 2 hours approximately

Method

1 Heat olive oil in a heavy based pan and place on a low heat.When hot, add chicken thighs and fry in pan until browned all over.Remove and set aside.
2 Fry onions and garlic until softened, add oregano, paprika and chorizo and fry for 2-3 minutes.
3 Next add the chicken thighs back into the pan and the stock. Add cornflour mixed with a little water to form a paste and add to pan.Stir well, season and bring to a boil, turn the heat down and simmer for 20 minutes until chicken is tender.
Remove from heat and set aside to cool.
4 Grease a 12 hole muffin tray, line each hole with short crust pastry, fill with the chicken mixture, top with a slice of manchego and place a puff pastry lid on top. Brush with beaten egg.
5 Bake in a 180C oven until pastry is thoroughly cooked and browned on top.
