1 packet of Loaf Slider Buns
10 small rounds of grilled eggplant
10 mild pickled pepperdews
10 small rounds of fresh mozzarella
Halve slider buns, butter and heat until warm through.
To assemble give each half of the slider a lick of mayonnaise. On the base of each bun add a round of the grilled eggplant, followed by two halves of a pepperdew, then top with a piece of mozzarella.
Place under the grill to warm the cheese, then top with a large basil leaf and place the lids on the sliders and serve.
