lockdown has thrown some challenges our way along with staff shortages, it has left us with the difficult decision that we need to stop delivering on Sundays for the short term.
1kg pork shoulder, skinless and boneless
1 Tbsp smoked paprika
1 Tbsp cumin powder
1/2 tsp dried oregano
2 tsp flakey salt
1/2 tsp ground black pepper
1 cup apple juice
1/2 cup chicken stock
1/2 cup BBQ sauce
To use with Loaf sliders
Preheat oven to 130 degrees.
Cut the pork into large pieces then place in a mixing bowl and coat with spices and seasoning.
Fry the pork in a little oil to caramelise the meat, then place in a casserole dish with the apple juice, chicken stock and BBQ sauce.
Cover with a tight fitting lid and place in the oven to cook for 3 1/2 hours until tender.
Remove from the oven and allow to cool.
Shred the pork then stir through the cooking liquid.
Refrigerate until required.
